2 cups warm liquid- water with 1/2 cup instant dry milk, sweet milk,

buttermilk, warm yogurt, potato water, or whatever you have!

2T honey, brown sugar or molasses

2 packages active dry yeast

2-3 cups stone ground wheat flour

2 teaspoons salt

2T melted shortening, lard, butter or safflower oil ( I use safflower oil in

this recipe but butter pans)

3-4 cups unbleached white flour

 

Combine the liquid, honey, and yeast in a mixing bowl, stirring until dissolved.  Beat in 2 cups of Whole wheat flour.  If the batter is not very stiff (it should be like a thick cake batter), add the last cup of whole wheat flour.  Cover with a towel and let proof l hour.  The batter will become light, bubbly and double in bulk.

 

Stir down the sponge and blend in the salt and shortening.  at this point you may add any of the suggested flours, seeds or wheat germ, as described at the end of the recipe.  For example, my first experiment was to add 1 cup of cooked oatmeal (left over from breakfast) and 1/2 cup each of wheat germ and soy flour.  after selected additions, gradually add sufficient white flour to make a soft, workable dough that pulls away from sides of bowl.  Turn out on a lightly floured surface and knead until smooth and elastic, about 8 minutes.  Round into a ball and place in a warm bowl brushed with melted shortening, turning to coat top.  Cover loosely with plastic wrap and a towel and let rise until double, about l hour.

 

Punch dough down, turn out on a lightly floured surface, and divide into 3 portions.  Knead, cover, and let rest 10 minutes.  Brush three 8 1/2 loaf pans with melted shortening.  Form the dough into loaves and place in the pans,  Cover and let rise until just rounded over top of pans.

 

Preheat oven to 400 degrees bake 30 minutes.  Turn out on wire racks to cool.  Get the butter ready and enjoy!
